Baby it’s cold outside! Nothing is better on a cold night than a bowl of soup. Our latest obsession is French Onion Soup – it’s rich and flavorful, but won’t leave you feeling like you need to run around the block ten times. Traditionally you use beef stock for the soup – however, this year we have some vegetarians coming over for dinner, so I’m using our Smokey Facon Sipping Broth from Millies Savory Teas. I’m not facon (get it?), it tastes just like beef broth, but it’s vegan! Here’s our recipe for Vegetarian French Onion Soup:
4 packs Smokey Facon Sipping Broth in a Tea Bag

Vegetarian French Onion Soup Recipe
3 tbs butter
4 large onions sliced thin
6 cups water
6 cups water
1 cup red wine (optional)
4 packs Smokey Facon Sipping Broth
Swiss or Gruyere cheese or a blend of both shredded
Melt the butter in a large pot over medium heat. Add the onions, bay leaves, thyme, and salt and pepper and cook until the onions are soft and caramelized, about 25 minutes. If you want to add the wine do it now, bring to a boil, reduce the heat and simmer until the wine has evaporated, about 5 minutes. Discard the bay leaves and thyme sprigs. Add the water and savory tea bags, bring the soup back to a simmer, and cook for about 10 minutes. Season, to taste, with salt and pepper.
Turn on the oven broiler and cut your baguette into slices. Line a cookie sheet with foil and place the baguette slices on it and then top them with the shredded cheese. Broil until cheese is nice a bubbly. Watch these carefully, the broiler will book them fast!
Place your soup into bowls and top with the cheese bread. If you like it extra cheesy top the soup with shredded cheese first and then add the cheesy bread.
